Three Shades of Red Salad

Red is the color of love, or so they say. And since it’s Valentine’s day tomorrow I wanted to post something in this lovely shade for the occasion. (Tomorrow watch out for Heart-Shaped Beet patties!) Most Valentine’s day recipes that I see feature lots of sweets, but I wanted to do a couple veggie dishes, both for my recipe challenge and as a lower-sugar alternative.

So let’s get right to it! Today’s featured veggie is red cabbage, which is a super healthy vegetable. Although green cabbage is eaten much more frequently and has a lot of antioxidants and cancer-preventing properties, red cabbage has even higher concentrations of phytonutrients due to the deep rich red color. It’s also an excellent source of Vitamin K and Vitamin C. Cabbage is very anti-inflammatory and is highly touted for its cancer- fighting and preventing properties. So not only is this salad perfectly colored for V-day, you can be sure it’s giving you a lot of great benefits! (And for whoever you might share it with, although you might just want to eat it all yourself. I sure did.)

Three Shades of Red Salad

  • 2 cups finely sliced red cabbage
  • 1 red or pink apple, thinly sliced
  • 4 red radishes, thinly sliced
  • 1 Tbs cherry jelly
  • 2 tsp apple cider vinegar
  • 1 tsp agave nectar
  • 1 Tbs olive oil
  • sea salt and fresh ground pepper, to taste

In a mixing bowl, gently combine red cabbage, apple and radish slices.

In a small bowl, stir together cherry jelly, apple cider vinegar, agave nectar, and olive oil. Season dressing to taste with salt and pepper. Add to salad ingredients and stir together, being careful not to break apple slices. Serve.

This salad was super easy to put together and had such a wonderful deep rich red color, perfect for Valentine’s day.
