Superbowl Snacks

Superbowl is right around the corner!  I’ll admit, I haven’t been a big fan of football since I was in high school; ever since I gave up cable 8 years ago I’ve been a bit out of the loop when it comes to television.  I get along just fine with hulu.com, thank you very much. 🙂  But recently I got back into it with my friend Steph, who has cable and likes to watch the games.  We get really into it!

So this year it looks like we’ll be having a ball (har har) together during Superbowl Sunday.  We may even be going to a friend’s house and watching the game in the hot tub!  Sign me up please.  So I figured the least I could do was provide some hearty snacks.  And boy, oh boy, I found an amazing recipe!  As soon as I saw this recipe I realized I needed to do a vegan version, and this afternoon Vegan Smoked Cheddar Chorizo Jalapeno Poppers were born.  I can’t believe how cheesy, gooey, and meaty these taste – in fact, even my meat-eating husband thought they were good!  (And that’s saying something – he usually HATES vegan cheese substitutes with a passion.)  Even the carnivores in the group will love the chorizo flavor and the cheesiness of these Superbowl snacks!

So here is my latest creation, just in time.  Snack it up folks!  Go Seahawks!!

 

Vegan Smoked Cheddar Chorizo

Jalapeno Poppers:

  • 24 jalapeno peppers, cut in half and seeded
  • 1 link vegan chorizo, or about 3/4 – 1 cup
  • 1/2 cup grated vegan cheddar, such as Daiya
  • 1/4 cup onion, finely diced
  • 1/2 cup Wayfare Hickory Cheddar Spread (or sub vegan cream cheese + 1 tsp liquid smoke)
  • 3 Tbs vegan sour cream, such as Tofutti
  • 1 Tbs hot sauce, such as Frank’s Red Hot
  • salt and pepper to taste, if desired (I didn’t find it needed any)

Preheat oven to 375 degrees Fahrenheit.  Brown/heat chorizo in a skillet if desired (vegan chorizo is not raw – it simply needs to be heated).  I feel that it gives it a bit more flavor to brown it just a bit.

Vegan Poppers Ingredients

Place chorizo in a large mixing bowl. Add shredded cheese, Wayfare (or cream cheese), sour cream, hot sauce, and onions. Mix well.

Press mixture into the jalapeno halves. Assemble on an oiled or parchment-lined baking sheet.

Bake until slightly browned and bubbly, about 20 minutes.

Superbowl is all about the yummy snacks (okay… maybe it’s about the game too!), so serve these up with some preserves.  Bring some chips and guacamole too and everyone will be happy.  Yum!!

Ingredients

These were a huge hit at the Superbowl party.  I made the mix first and got the peppers ready and then assembled all of it when I got there – there wasn’t even one left by halftime!  Since the party was 80% men, I think that’s pretty darn good.
