Pineapple Cilantro Mojito

It’s been a long time since I’ve done a drink recipe, so today’s a wild card. I know there are quite a few people who won’t appreciate that this lovely cocktail features cilantro; apparently a lot of people are genetically predisposed to an aversion to the taste of this herb. To these people cilantro can taste like soap. Who knew?! I’ve loved cilantro from the first time I tasted it and use it all the time, so I wanted to do something special with the recipe when I featured it. (Plus it was getting late and I’m feeling lazy, so a cocktail sounded just about right.)

Despite having a strange flavor for some, cilantro is a brightly-flavored and healthy herb that lends itself to many dishes, especially to Asian and Latin cuisines. Rich in Vitamin A and K, cilantro has a good amount of many vitamins and minerals and can help reduce bad cholesterol levels.

Cilantro Pineapple Mojito

 

Pineapple Cilantro Mojito

  • 2 oz white rum
  • 1 oz pineapple juice
  • 3 lime slices, plus extra for garnish
  • 1 tsp sugar
  • 1/4 cup cilantro, plus extra for garnish
  • lemon-lime soda (Zevia is great)

In a shaker muddle sugar, cilantro and lime.

Add pineapple juice and rum with ice and shake well.

Pour into a tall glass half full of crushed ice. Top with lemon-lime soda and garnish with lime and cilantro.
